Vegetarian Fish

Ingredients: 1 big eggplant.
Seasoning: 1/4 red capsicum, a little piece of celery, 0.3 Litre of oil, 1 tablespoon of Soya sauce, 1 tablespoon of oyster sauce, 1 tablespoon of water
Preparation: Peel the eggplant skin off, cut the eggplant in half, trim into a fish shape (see picture) cut on the diagonal into approx 2cm squares and then put into the cold water half hour, take out and dry the off water. Cut the capsicum and celery into thin threads.
Cooking: Heat the wok, put the oil in, wait for the oil to become hot, put the eggplant in, deep fry for about 8 minutes, take out. Pour the oil into a container. Heat the wok again. Put in a teaspoon of oil and then put the eggplant back in, put the water , Soya Sauce and oyster sauce in , cook for about 5 minutes. Put on a serving plate. Put the capsicum and celery in and cook for about 2 minutes. Take out and garnish the eggplant. Pour the sauce over. Ready to serve. Hao Chi.
